A pizza stone is a flat slab of stone or ceramic that sits on your oven rack, soaking up and more importantly, holding onto heat. As unbaked pizza dough rests directly on it, the hot stone transmits heat to the bottom of the crust, much like the floor of a wood-fired oven.

Pizza stones fall under the broader category of baking stones. The main difference is that a pizza stone might be round, whereas a baking stone is often rectangular. All pizza stones are baking stones, but not all baking stones are specifically for pizza. However, you can certainly use a rectangular baking stone for pizza.

Different thicknesses are available; thicker ones generally work better and are more durable, but they're more expensive and take longer to heat up.

How It Works

How to Use a Pizza Stone

Mostly, a pizza stone transfers heat upward to the dough from below. A common misconception is that its porous surface soaks up moisture to create a crispy crust. This is not the case. At 500°F, water in the dough quickly turns into steam and evaporates, so no moisture can be absorbed.

Unlike smooth metal baking pans, the tiny pores of a pizza stone let steam escape easily. Metal surfaces trap moisture, resulting in a soggy crust. Ultimately, the biggest advantage of a pizza stone lies in its excellent heat retention.

To use a pizza stone for baking pizza, follow these steps:

1.Place your pizza stone in a cold oven.

2.Preheat to 500 F. Once the oven is preheated, so is the stone.

3.Slide the pizza onto the stone.
4.Bake until cheese is lightly browned.
5.Remove the pizza and turn off the oven.
6.When cool, brush the stone, don't wash it.
